To book a taxi in Firenze, call the radio taxi at 055 4390 or use the appTaxi app. Taxis don't stop on the street: you book them or catch one at a taxi rank.
In Florence you can catch a taxi at a taxi rank (station, Duomo, etc.) or call the radio taxi on 055 4390 (CO.TA.FI.) or 055 4242 (SO.CO.TA.), both active 24 hours a day; the appTaxi app is also handy. Taxis are allowed into the historic centre's ZTL.
